Chocolate and Pistachio Roll
17/11/2023The chocolate and pistachio roll is a delicious and refined dessert, perfect for any occasion. Here’s the recipe to make it:
Ingredients
For the roll dough:
- 4 eggs
- 120 g of sugar
- 100 g of type 00 flour
- 1 pinch of salt
- 30 g of cocoa powder
For the filling:
- 250 g of mascarpone cream
- 100 g of unsalted pistachios
- 2 tablespoons of powdered sugar
For the decoration:
- 100 g of dark chocolate
- Chopped pistachios to taste
Preparation

Start by preparing the roll dough. Preheat the oven to 180 degrees C. Separate the yolks from the egg whites. Whip the yolks with half of the sugar until you get a light and fluffy mixture.

Whip the whites with the remaining sugar until you get a firm and glossy meringue.

Carefully fold the meringue into the yolk mixture, alternating with the flour, cocoa, and a pinch of salt, sifted together to prevent lumps from forming.

Pour the batter into a baking sheet lined with parchment paper and spread it evenly.

Bake in the oven for about 10-12 minutes. As soon as the dough is cooked, turn it out onto a damp kitchen towel, gently peeling off the parchment paper.

For the filling, finely chop the pistachios and mix them with the mascarpone cream and powdered sugar until you obtain a smooth mixture.

Spread the cream on the dough, leaving a free edge of about 2 cm.

Gently roll up the dessert using the kitchen towel, starting from the long side. Wrap the roll in cling film and leave it to rest in the refrigerator for at least an hour.

In the meantime, melt the dark chocolate in a double boiler or microwave.

After the resting time, remove the roll from the refrigerator and take off the cling film. Cover the dessert with the melted chocolate and sprinkle the surface with the chopped pistachios.

Let the chocolate solidify before serving the chocolate and pistachio roll in slices.
