Chocolate and Pear Plumcake

The chocolate and pear plumcake is a soft and tasty dessert, perfect for breakfast or an elegant snack. Here are the ingredients and the procedure to prepare it.

Ingredients

  • 3 ripe pears
  • 200 g of all-purpose flour
  • 200 g of sugar
  • 150 g of soft butter
  • 3 eggs
  • 100 g of unsweetened cocoa powder
  • 1 packet of baking powder
  • 1 pinch of salt
  • Butter and flour to taste, for greasing and flouring the mold
  • Icing sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel the pears and cut them into cubes or slices, as you prefer.
  3. In the bowl of a stand mixer or using a hand mixer, work the soft butter with the sugar until it becomes creamy.
  4. Add the eggs, one at a time, continuing to mix.
  5. Sift together the flour, cocoa, baking powder, and salt, then gradually incorporate them into the mixture of butter, sugar, and eggs.
  6. Fold the pieces of pear into the mixture and stir gently with a spatula to distribute them evenly.
  7. Grease and flour a plumcake mold, pour the mixture in, and level it with a spatula.
  8. Bake the plumcake for about 40-50 minutes, or until it passes the toothpick test: insert a toothpick into the cake, if it comes out clean, it’s done.
  9. Take the plumcake out of the oven and let it cool on a wire rack before removing it from the mold.
  10. When cool, you can decorate with icing sugar if you like.

Given the fruit used, this plumcake has a very distinct Italian touch. In Italy, desserts with pears and chocolate are a classic born from the harmonious combination of the sweet flavors of pears and the intensity of cocoa. If you wish, you can accentuate the Italian character by incorporating a little liquor, such as Amaretto, into the recipe to flavor the plumcake further.
