- Butter and flour to taste, for greasing and flouring the mold
- Icing sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C.
- Peel the pears and cut them into cubes or slices, as you prefer.
- In the bowl of a stand mixer or using a hand mixer, work the soft butter with the sugar until it becomes creamy.
- Add the eggs, one at a time, continuing to mix.
- Sift together the flour, cocoa, baking powder, and salt, then gradually incorporate them into the mixture of butter, sugar, and eggs.
- Fold the pieces of pear into the mixture and stir gently with a spatula to distribute them evenly.
- Grease and flour a plumcake mold, pour the mixture in, and level it with a spatula.
- Bake the plumcake for about 40-50 minutes, or until it passes the toothpick test: insert a toothpick into the cake, if it comes out clean, it’s done.
- Take the plumcake out of the oven and let it cool on a wire rack before removing it from the mold.
- When cool, you can decorate with icing sugar if you like.
Given the fruit used, this plumcake has a very distinct Italian touch. In Italy, desserts with pears and chocolate are a classic born from the harmonious combination of the sweet flavors of pears and the intensity of cocoa. If you wish, you can accentuate the Italian character by incorporating a little liquor, such as Amaretto, into the recipe to flavor the plumcake further.
