Chocolate and Nougat Salami

Chocolate and nougat salami is a delicious variant of the classic chocolate salami. Here’s the recipe:

Ingredients

  • 200 g of dry biscuits
  • 100 g of soft nougat
  • 150 g of dark chocolate
  • 100 g of butter
  • 70 g of powdered sugar
  • 1 egg (optionally pasteurized for safety)
  • Cocoa powder as needed for finishing
  • (Optional) A shot of sweet liqueur, such as rum or Marsala

Preparation

  1. Break the dry biscuits into pieces that are not too small but not too large either, to add crunchiness to the salami.
  2. Cut the soft nougat into small-sized cubes.
  3. Melt the dark chocolate with the butter in a double boiler. Mix until you have a smooth and homogeneous cream.
  4. Remove the chocolate from the double boiler and let it cool down a bit. Add the sifted powdered sugar and mix well.
  5. Incorporate the egg into the chocolate mixture, stirring vigorously to blend everything. If you want to avoid using raw egg, you can replace it with a pasteurized egg or omit it altogether.
  6. If you wish to use the liqueur, add it to the mixture and mix until it is well absorbed.
  7. Add the biscuits and nougat to the chocolate mixture and blend all the ingredients with a spatula or wooden spoon.
  8. Lay out a sheet of parchment paper and pour the mixture in the center, forming the classic cylindrical shape of salami.
  9. Roll the mixture in the parchment paper and tie the ends tightly, as if it were a real salami. Put in the fridge for at least 3-4 hours.
  10. Before serving, remove the chocolate salami from the refrigerator and roll it in cocoa powder to give it the rustic look typical of chocolate salami.
  11. Slice and serve at room temperature to allow the chocolate to soften slightly.

The tradition of chocolate salami seems to have various origins, but one of the most credited is that it was born in Portugal and then spread to Italy, where it has won over the palates of both adults and children with its simplicity and deliciousness. The nougat added to this variant enriches the recipe with its sweetness and unique texture.
