Chocolate and Hazelnuts Roll

Here is the recipe for a delicious chocolate and hazelnuts roll, a real temptation for dessert lovers.

Ingredients

  • 4 eggs
  • 100 g of sugar
  • 100 g of flour
  • 25 g of unsweetened cocoa powder
  • 1 pinch of salt
  • 200 g of dark chocolate
  • 200 ml of fresh cream
  • 100 g of coarsely chopped hazelnuts

For the filling:

  • 250 g of mascarpone
  • 50 g of powdered sugar
  • 100 g of roasted and finely chopped hazelnuts

Preparation

  1. Start by preparing the biscuit dough for the roll. Whip the eggs with the sugar until you obtain a fluffy and frothy mixture. You can use an electric whisk or a stand mixer to facilitate the process.
  2. Sift the flour with the cocoa and pinch of salt, then gently fold it into the egg mixture using a spatula and upward motions to keep the mixture airy.
  3. Line a rectangular baking tray with parchment paper and pour the mixture in, leveling it well. Bake in a preheated oven at 180 °C for about 10-12 minutes.
  4. Meanwhile, prepare the chocolate ganache by melting the dark chocolate in a double boiler, then combine it with the previously whipped cream, folding gently.
  5. Take the biscuit base out of the oven and turn it onto a damp kitchen towel; gently remove the baking paper and roll the biscuit with the towel. Let it cool completely.
  6. When the biscuit is cold, unroll it and spread the chocolate ganache over its surface, then sprinkle with the coarsely chopped hazelnuts.
  7. For the filling, mix the mascarpone with the powdered sugar and spread this cream over the ganache.
  8. Roll the biscuit again, this time without the towel, forming a roll. Wrap it in cling film and let it rest in the refrigerator for at least one hour.
  9. Before serving, dust the roll with powdered sugar and garnish with roasted and finely chopped hazelnuts.

The chocolate and hazelnuts roll is a delicious variation of the classic jam roll. In Italy, especially in Piedmont, hazelnuts are highly valued and used in pastries, also because of the famous Langhe area, known for its production of excellent quality hazelnuts.
