Chickpea, Potato, and Carrot Flan

Ingredients

  • 200 g of dry chickpeas (or 400 g of pre-cooked chickpeas)
  • 300 g of potatoes
  • 200 g of carrots
  • 1 medium white onion
  • 2 cloves of garlic
  • 2 eggs
  • 50 g of grated cheese (Parmesan or Pecorino)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs to taste (thyme, rosemary, etc.)
  • Breadcrumbs for breading

Preparation

  1. Chickpea soaking: If using dry chickpeas, soak them in cold water for at least 12 hours. Then drain and cook them in fresh water for about 1 hour and 30 minutes or until they become tender. If you’re using pre-cooked chickpeas, you can skip this step.

  2. Cooking the vegetables: Clean the potatoes and carrots and steam or boil them in salted water until they are soft. Meanwhile, in a pan, fry the chopped onion and garlic with a drizzle of oil until they become translucent.

  3. Preparing the mixture: Mash the potatoes and carrots with a potato masher or a fork. Blend the chickpeas in a mixer or, if you prefer a more rustic texture, coarsely mash them with a fork. In a large bowl, combine the mashed vegetables, chickpeas, eggs, grated cheese, salt, pepper, and finely chopped herbs. Mix well until you have a homogeneous mixture.

  4. Shaping the flan: Take a baking pan (a springform pan is better) and grease the bottom and sides with a bit of oil. Sprinkle with breadcrumbs to prevent the flan from sticking. Pour the mixture into the mold and level it with the back of a spoon. Sprinkle the surface with more breadcrumbs and a drizzle of oil.

  5. Baking: Preheat the oven to 180 °C and bake the flan for about 40 minutes or until the surface is well browned and crunchy.

  6. Finishing: Let the flan cool slightly before unmolding. Serve accompanied by a yogurt sauce or a fresh tomato sauce if you wish to add a touch of freshness.
