Chickpea Crepes with Cod Mousse

Ingredients

For the chickpea crepes:
- 100 g chickpea flour
- 250 ml water
- Salt to taste
- Pepper to taste
- Extra virgin olive oil for greasing the pan

For the cod mousse:
- 200 g of already soaked cod
- 1 medium potato
- 1 clove garlic
- Extra virgin olive oil to taste
- Milk to taste (optional)
- Salt to taste
- Pepper to taste

For the garnish:
- Chopped parsley
- Grated lemon zest
- Sliced black olives (optional)
Preparation

Begin by preparing the batter for the crepes by mixing chickpea flour with water, salt, and pepper. Let the batter rest for about 30 minutes.

Meanwhile, prepare the cod mousse. Boil the potato in salted water until it becomes soft.

Cook the cod in a pan with a drizzle of oil and a clove of garlic. If necessary, add a little milk to keep the cod soft.

Once the potato is boiled, mash it with a fork or pass it through a potato masher.

Remove the garlic and blend the cod with the mashed potato, adding extra virgin olive oil until a creamy and homogeneous consistency is reached. Adjust the seasoning with salt and pepper.

Heat a non-stick pan and lightly grease it with extra virgin olive oil. Pour a ladle of batter and spread it out to form a thin crepe. Cook for a few minutes on each side or until it becomes slightly golden.

Complete each crepe with the cod mousse, roll it up or fold it like a wallet, then garnish with chopped parsley, lemon zest, and, if you like, black olives.
