Chickpea and Potato Hamburgers
17/11/2023Chickpea and potato hamburgers are an excellent vegetarian alternative to classic meat hamburgers, and they’re also very flavorful. Here’s how to prepare them:
Ingredients
- 400 grams of already cooked chickpeas (if you use dry chickpeas, remember to soak them overnight and then cook them)
- 2 medium potatoes
- 1 clove of garlic
- 1 small onion
- 2 tablespoons of chopped parsley
- Salt to taste
- Pepper to taste
- 1 teaspoon of paprika (optional, for a bit of spiciness)
- Flour as needed (to make the dough more compact if necessary)
- Breadcrumbs as needed (for breading)
- Extra virgin olive oil or other oil for cooking
Preparation
- Peel the potatoes, cut them into cubes, and cook them in salted boiling water until they are soft. Drain them and let them cool down.
- Peel and finely chop the garlic and onion.
- In a large bowl, mash the chickpeas with a fork or use a blender to obtain a finer texture, but without it becoming completely creamy.
- Add the mashed potatoes, chopped garlic, onion, parsley, salt, pepper, and paprika to the chickpeas. Mix all the ingredients well until you get a homogeneous mixture. If the mixture is too moist, you can add some flour to absorb the excess moisture.
- Form patties with the obtained mixture with your hands, coat them in breadcrumbs, and place them on a plate.
- Heat a drizzle of oil in a non-stick pan and cook the hamburgers for about 3-4 minutes per side over medium-high heat until they become golden and crispy.
