Chicken with Vegetables

Preparation

  2. Season the chicken thighs or breasts with salt and pepper.
  3. In a large pan or pot, heat the extra virgin olive oil over medium-high heat and brown the chicken until golden on both sides. Then remove the chicken and set it aside.
  4. In the same pan, add another drizzle of oil if necessary and sauté the onion and garlic until they are soft.
  5. Add the carrots and bell pepper and cook for a few minutes.
  6. Introduce the zucchini and continue to cook until the vegetables start to soften.
  7. Put the chicken back in the pan with the vegetables, add the broth and the aromatic herbs, cover with a lid and let cook for about 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
