Chicken with Mushrooms
17/11/2023Chicken with mushrooms is a tasty and relatively simple dish to prepare. Here’s how you can cook it, with an Italian touch, which never hurts.
Ingredients
- 4 chicken breasts (skinless and boneless)
- 250 grams of mushrooms (button or porcini for a stronger flavor)
- 2 cloves of garlic
- 1 sprig of fresh rosemary (or 1 teaspoon of dried rosemary)
- 120 milliliters of white wine
- 120 milliliters of chicken or vegetable broth
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
- 1 tablespoon of flour (optional for flouring the chicken)
Preparation
- If you prefer, lightly flour the chicken breasts. This will help to create a golden crust as you sauté them.
- In a large skillet, heat the extra virgin olive oil over medium heat and add the chicken. Sauté the chicken for about 3-4 minutes per side or until it is well browned. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the chopped garlic and rosemary. Sauté for a minute, then add the sliced mushrooms. Cook until the mushrooms have softened and browned.
- Deglaze with white wine, allowing the alcohol to evaporate.
- Add the chicken broth and simmer for a couple of minutes.
- Return the chicken to the skillet with the mushrooms and cook everything covered for about 20 minutes over medium-low heat, turning the chicken halfway through cooking. If the sauce reduces too much, add a little bit of broth.
- Season with salt and pepper to taste.
- Once the chicken is cooked and the sauce has reached the desired consistency, sprinkle with chopped fresh parsley to add a hint of color and flavor.
Serve your chicken with mushrooms with a side of roasted potatoes or mashed potatoes and a nice glass of Italian white wine that you used for cooking, like a chilled Pinot Grigio or Chardonnay.
