Creamy Chicken with Bacon

Ingredients

  • 4 chicken breasts
  • 200g of diced bacon
  • 200ml of cooking cream
  • 1 small onion
  • 2 cloves of garlic
  • Salt, as needed
  • Pepper, as needed
  • Extra virgin olive oil, as needed
  • Aromatic herbs to taste (rosemary, thyme, sage)
  • A glass of white wine
  • A knob of butter for cooking

Preparation

  1. Begin by cutting the chicken breasts into bite-sized pieces or leave them whole, according to your preference.
  2. Finely slice the onion and garlic.
  3. In a large frying pan, warm a drizzle of extra virgin olive oil and a knob of butter.
  4. Add the bacon and allow it to brown until it becomes crispy.
  5. At this point, remove it from the pan and set it aside.
  6. In the same pan, add the onion and garlic and sauté until golden.
  7. Add the chicken pieces and brown on all sides over medium-high heat until they take on a golden color.
  8. Season with salt and pepper to taste.
  9. Deglaze with the white wine and let the alcohol evaporate.
  10. Lower the heat, cover with a lid and cook for about 20-25 minutes until the chicken is cooked through.
  11. Remove the chicken and keep it warm.
  12. In the same pan, add the cream and mix well, scraping up all the flavors from the bottom of the pan.
  13. If you wish, you can add aromatic herbs to taste.
  14. Allow the sauce to thicken over low heat for a few minutes.
  15. Stir the bacon back into the sauce and then add the chicken, letting it all flavor together for a few more minutes.

Serve the creamy chicken with bacon hot, perhaps accompanied by a side of steamed vegetables or a serving of mashed potatoes.
