Creamy Chicken with Bacon

Ingredients
- 4 chicken breasts
- 200g of diced bacon
- 200ml of cooking cream
- 1 small onion
- 2 cloves of garlic
- Salt, as needed
- Pepper, as needed
- Extra virgin olive oil, as needed
- Aromatic herbs to taste (rosemary, thyme, sage)
- A glass of white wine
- A knob of butter for cooking
Preparation
- Begin by cutting the chicken breasts into bite-sized pieces or leave them whole, according to your preference.
- Finely slice the onion and garlic.
- In a large frying pan, warm a drizzle of extra virgin olive oil and a knob of butter.
- Add the bacon and allow it to brown until it becomes crispy.
- At this point, remove it from the pan and set it aside.
- In the same pan, add the onion and garlic and sauté until golden.
- Add the chicken pieces and brown on all sides over medium-high heat until they take on a golden color.
- Season with salt and pepper to taste.
- Deglaze with the white wine and let the alcohol evaporate.
- Lower the heat, cover with a lid and cook for about 20-25 minutes until the chicken is cooked through.
- Remove the chicken and keep it warm.
- In the same pan, add the cream and mix well, scraping up all the flavors from the bottom of the pan.
- If you wish, you can add aromatic herbs to taste.
- Allow the sauce to thicken over low heat for a few minutes.
- Stir the bacon back into the sauce and then add the chicken, letting it all flavor together for a few more minutes.
Serve the creamy chicken with bacon hot, perhaps accompanied by a side of steamed vegetables or a serving of mashed potatoes.
Curiosity
The bacon adds a smoky flavor to the dish, making it richer, but if you prefer a lighter version, you can use thick slices of cooked ham instead of bacon. Moreover, the cooking cream can be replaced with a lighter version or even with a bit of broth and cornstarch to thicken if you are looking for a version with less fat.
