Thyme and Lemon Chicken Wings

Ingredients

  • 1 kg of chicken wings
  • 2 lemons
  • 4 sprigs of fresh thyme
  • 3 tablespoons of extra virgin olive oil
  • 2 cloves of garlic
  • Salt and pepper to taste
  • 1 pinch of red pepper flakes (optional)

Preparation

  1. Preheat the oven to 200°C.
  2. Wash and dry the chicken wings. Place them in a large bowl.
  3. Grate the zest of the lemons, avoiding the white part, which is bitter, and squeeze their juice. Strain the juice to remove the seeds and add it to the chicken wings.
  4. Add the grated lemon zest to the chicken wings as well.
  5. Remove the leaves from the thyme sprigs and thinly slice the garlic cloves; add them to the bowl with the wings.
  6. Pour in the extra virgin olive oil, salt, pepper, and if desired, a pinch of red pepper flakes. Mix well so that the wings are completely covered with the marinade.
  7. Let the wings marinate in the mixture for at least 30 minutes, if possible, to intensify the flavors.
  8. Transfer the chicken wings and marinade to a baking sheet lined with parchment paper.
  9. Bake for about 40-45 minutes or until the wings are golden and crispy, turning them halfway through for even browning.
