Chicken wings and oregano au gratin potatoes

Here is the recipe to prepare delicious chicken wings and oregano au gratin potatoes with an Italian twist.

Ingredients

For the chicken wings:

  • 1 kg chicken wings
  • 2 tablespoons extra virgin olive oil
  • 1 clove of garlic
  • 1 sprig of fresh rosemary
  • Salt and pepper to taste
  • Juice of 1 lemon

For the oregano au gratin potatoes:

  • 800 g potatoes
  • 100 g grated Parmesan cheese
  • 50 g breadcrumbs
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 clove of garlic
  • Butter to taste for greasing the baking dish

Preparation

For the chicken wings:

  1. Prepare a marinade with extra virgin olive oil, lemon juice, crushed garlic, chopped rosemary needles, salt and pepper.
  2. Massage the chicken wings with the marinade and let them rest in the refrigerator for at least one hour.
  3. Preheat the oven to 200 °C.
  4. Arrange the wings on a baking tray lined with parchment paper and cook for about 40-45 minutes, turning halfway through cooking, or until they are golden and crispy.

For the oregano au gratin potatoes:

  1. Clean and slice the potatoes thinly, without peeling them for a higher fiber content and a rustic touch.
  2. In a bowl, mix the grated Parmesan, breadcrumbs, oregano, salt, pepper and chopped garlic.
  3. Grease a baking dish with some butter and place a layer of potatoes.
  4. Sprinkle over some of the Parmesan and breadcrumb mixture and a drizzle of oil, then add another layer of potatoes and repeat the operation until all ingredients are used up.
  5. Finish with the Parmesan mix and a sprinkle of oregano.
  6. Bake in the oven at 200 °C for about 40-50 minutes or until the potatoes are golden and crispy on the surface.

Serve the chicken wings and au gratin potatoes hot, perhaps accompanied by a fresh green salad and an Italian craft beer to complete the meal.

Chicken wings are a very popular dish in the United States, where “Buffalo wings” - spicy chicken wings usually served with a blue cheese-based sauce - are a classic dish associated with sporting events. The oven-baked variant I have suggested is healthier than the traditional fried wings. Baking indeed allows for a reduction in the use of fats without sacrificing crispiness.
