Ingredients
- 4 whole chicken thighs (or 8 upper thighs)
- 2 bell peppers of different colors (e.g., red and yellow) for a more vibrant visual touch

- 2 cloves of garlic
- Extra virgin olive oil as needed
- Salt and pepper as needed
- A sprig of rosemary or some basil leaves for an Italian touch
- 100 ml of white wine or chicken broth to deglaze

Preparation
- Start by washing and drying the chicken thighs. Season them with salt and pepper and, if you wish, with a pinch of oregano or paprika.
- Heat a bit of extra virgin olive oil in a large pan and brown the chicken thighs on all sides until they become golden.
- While the chicken is browning, clean the bell peppers by removing the seeds and cut them into strips or pieces. Also, slice the onion and finely chop the garlic.
- Once the chicken is well browned, remove the thighs from the pan and set them aside.
- In the same pan, add a drizzle of oil if necessary and lightly fry the onion until it becomes translucent. Then add the garlic and let it release its aroma for about a minute.
- Add the bell peppers to the pan and cook them for a few minutes until they begin to soften.
- Put the chicken back in the pan with the peppers and add the white wine or chicken broth.
- Cook over medium-low heat, covered, for about 30-40 minutes or until the chicken is well cooked and the peppers are tender but not mushy.
- At the end of cooking, if you wish, add some fresh aromatic herbs such as rosemary or basil to further scent the dish.
- Taste and adjust the salt and pepper if necessary, then serve hot.
