Chicken Strips with Radicchio

Chicken strips with radicchio are a tasty and simple dish to prepare. Here’s the recipe with a little Italian touch:

Ingredients

  • 400 grams of chicken breast
  • 1 head of red radicchio
  • 2 tablespoons of extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/2 glass of white wine
  • 1 clove of garlic
  • (Optional) Parmesan or grated Parmigiano to garnish
  • (Optional) Some walnuts for a crunchy note

Preparation

  1. Start by cutting the chicken breast into strips, i.e., thin and not too long strips.
  2. Wash the radicchio and cut it into ribbons.
  3. In a frying pan, heat the extra virgin olive oil with a peeled and crushed garlic clove.
  4. Once the garlic is golden, remove it and add the chicken strips.
  5. Brown the chicken until it is well seared on all sides.
  6. Season with salt and pepper to taste.
  7. Deglaze with the white wine and let the alcohol evaporate.
  8. Add the cut radicchio to the pan, stirring well to flavor everything.
  9. Cook for another 5-7 minutes, until the radicchio has slightly wilted and the chicken is well cooked.
  10. If you wish, before removing from the heat, you can add crushed walnuts for a crunchy touch.
  11. Serve immediately, possibly sprinkled with Parmesan or grated Parmigiano.
