Chicken Strips with Mushrooms

Here’s the recipe for chicken strips with mushrooms, with an Italian twist:

Ingredients

  • 400 g of chicken breast
  • 300 g of mushrooms (button or porcini)
  • 1 clove of garlic
  • Fresh parsley to taste
  • 1/2 glass of white wine
  • Flour as needed for dusting the chicken
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Clean the mushrooms with a damp cloth and slice them. If you use fresh porcini, the flavor will be more intense and characteristic.
  2. Cut the chicken breast into strips (straccetti) and lightly flour them.
  3. In a large frying pan, heat a drizzle of extra virgin olive oil and sauté the garlic, which you can remove as soon as it is golden to avoid an overly strong flavor.
  4. Add the chicken strips to the pan and let them brown on all sides.
  5. Deglaze with white wine and let the alcohol evaporate on high heat.
  6. Add the mushrooms, salt and pepper to taste, and cook everything for about 10 minutes, or until the mushrooms are tender and the chicken is fully cooked.
  7. At the end of cooking, add the freshly chopped parsley for a touch of color and freshness.
