Chicken Strips with Mushrooms

Ingredients
- 400 g of chicken breast
- 300 g of mushrooms (button or porcini)
- 1 clove of garlic
- Fresh parsley to taste
- 1/2 glass of white wine
- Flour as needed for dusting the chicken
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- Clean the mushrooms with a damp cloth and slice them. If you use fresh porcini, the flavor will be more intense and characteristic.
- Cut the chicken breast into strips (straccetti) and lightly flour them.
- In a large frying pan, heat a drizzle of extra virgin olive oil and sauté the garlic, which you can remove as soon as it is golden to avoid an overly strong flavor.
- Add the chicken strips to the pan and let them brown on all sides.
- Deglaze with white wine and let the alcohol evaporate on high heat.
- Add the mushrooms, salt and pepper to taste, and cook everything for about 10 minutes, or until the mushrooms are tender and the chicken is fully cooked.
- At the end of cooking, add the freshly chopped parsley for a touch of color and freshness.
