Stewed Chicken with Potatoes
17/11/2023I can guide you through the preparation of stewed chicken with potatoes, a simple and rustic dish that is part of the Italian culinary tradition. It’s a comforting and flavorful dish, perfect for a family dinner.
Ingredients
- 4 chicken thighs
- 500g of potatoes
- 1 onion
- 2 cloves of garlic
- 1 sprig of rosemary
- 500 ml of tomato puree
- 200 ml of chicken broth or water
- 100 ml of white wine
- Extra virgin olive oil
- Salt and pepper
- Chili pepper (optional)
Preparation
- Start by peeling the potatoes and cutting them into not too small pieces.
- Finely chop the onion and garlic. Strip the leaves off the rosemary sprig.
- In a large pan or a casserole dish, heat a drizzle of extra virgin olive oil and brown the chicken thighs until they become golden on all sides. Season with salt and pepper to your liking.
- Remove the chicken from the pan and set it aside. In the same oil, fry the onion, garlic, and rosemary with a pinch of chili pepper, if you like.
- Once the onion becomes translucent, put the chicken back in the pan and deglaze with white wine.
- Let the alcohol evaporate and then add the tomato puree. If necessary, add a bit of water or broth to prevent the sauce from drying out too much.
- Bring to a boil, decrease the heat and simmer slowly for about 20 minutes.
- Add the potatoes into the sauce with the chicken, adding some broth if the sauce has dried out too much.
- Continue cooking for another 20-30 minutes or until the potatoes are soft and the chicken is well cooked.
- Taste and adjust the seasoning with salt and pepper before serving.
Curiosity
Stewed Chicken with Potatoes is a classic Sunday dish in many Italian regions. Depending on local tradition it can be enriched with olives, capers, or different aromatic herbs such as bay leaves or sage. In some variations, a whole chicken cut into pieces is also used. The presence of tomato in the recipe is a characteristic of the southern regions of Italy, while in the north, a “white stew,” without tomato puree, is more commonly prepared.
It’s a dish that pairs well with a medium-bodied red wine, which balances the intense flavor of the tomato sauce and the rustic taste of the chicken.
