Chicken Souvlaki

Ingredients for 4 people:

  • 500 g of chicken breast
  • 2 cloves of garlic
  • The juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil

  • Chili powder (optional, for the Italian touch)
  • 1 red bell pepper (Italian touch)
  • 1 zucchini (Italian touch)
  • Wooden or metal skewers

Preparation

  1. Cut the chicken breast into approximately 3 cm cubes.
  2. In a large bowl, prepare the marinade by mixing lemon juice, extra virgin olive oil, finely chopped garlic, oregano, salt, pepper, and a pinch of chili powder to add a spicy Italian touch.
  3. Add the chicken to the marinade making sure all pieces are well covered. Allow to marinate in the refrigerator for at least 30 minutes, better if for a few hours.
  4. Meanwhile, if you are using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking.
  5. Cut the red bell pepper and zucchini into cubes similar in size to the chicken.
  6. Alternately thread the marinated chicken and vegetable pieces onto each skewer.
  7. Cook the souvlaki on a hot grill or grill pan for about 10-15 minutes, turning occasionally, until the chicken is well cooked and the vegetables are slightly charred.
  8. Serve hot, perhaps with a fresh Greek salad and some tzatziki to complete the meal.
