Chicken Souvlaki

Ingredients for 4 people:
- 500 g of chicken breast
- 2 cloves of garlic
- The juice of 1 lemon
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Chili powder (optional, for the Italian touch)
- 1 red bell pepper (Italian touch)
- 1 zucchini (Italian touch)
- Wooden or metal skewers
Preparation
- Cut the chicken breast into approximately 3 cm cubes.
- In a large bowl, prepare the marinade by mixing lemon juice, extra virgin olive oil, finely chopped garlic, oregano, salt, pepper, and a pinch of chili powder to add a spicy Italian touch.
- Add the chicken to the marinade making sure all pieces are well covered. Allow to marinate in the refrigerator for at least 30 minutes, better if for a few hours.
- Meanwhile, if you are using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking.
- Cut the red bell pepper and zucchini into cubes similar in size to the chicken.
- Alternately thread the marinated chicken and vegetable pieces onto each skewer.
- Cook the souvlaki on a hot grill or grill pan for about 10-15 minutes, turning occasionally, until the chicken is well cooked and the vegetables are slightly charred.
- Serve hot, perhaps with a fresh Greek salad and some tzatziki to complete the meal.
