Chicken skewers with pita

Ingredients
- 500 grams of chicken breast
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried rosemary
- 2 cloves of garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- Pita bread
- Mixed vegetables for grilling (bell peppers, onions, zucchini)
- Green salad for serving
Preparation
- Cut the chicken breast into cubes of about 3 cm.
- In a bowl, mix the olive oil, oregano, rosemary, minced garlic, lemon juice, salt, and pepper. Add the chicken cubes and let marinate for at least 30 minutes in the refrigerator.
- Meanwhile, prepare the vegetables: cut the bell peppers, onions, and zucchini into pieces that can be skewered.
- Prepare the skewers by alternating pieces of chicken and vegetables. If using wooden sticks, remember to soak them in water for about 30 minutes beforehand to prevent them from burning during cooking.
- Heat a grill or a grill pan and cook the skewers for about 10-15 minutes, turning occasionally until they are well browned on all sides.
- Warm the pita bread on the grill or in the oven for a few minutes.
- Serve the skewers together with the warm pita bread and a green salad dressed with olive oil and balsamic vinegar.
