Chicken Skewers

Chicken skewers are a versatile and simple dish to prepare. Here’s the recipe:

Ingredients

  • 500 g of chicken breast
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion
  • 2 zucchinis
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Fresh or dried aromatic herbs (rosemary, thyme, oregano)

Marinade (optional):

  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1 clove of garlic, chopped
  • Salt and pepper to taste

Preparation

  1. Cut the chicken breast into cubes of about 2 cm per side.
  2. If you wish to use the marinade, mix the oil, lemon juice, chopped garlic, salt, and pepper in a bowl. Add the chicken cubes, cover, and let marinate in the refrigerator for at least 30 minutes.
  3. Clean and cut the bell peppers, onion, and zucchinis into pieces that match the size of the chicken cubes.
  4. Take wooden skewer sticks (if they are wooden, soak them in water for about 20 minutes before to prevent burning during cooking) and thread alternating a piece of vegetable with a marinated chicken cube.
  5. Season the skewers with salt, pepper, and a drizzle of extra virgin olive oil. If you wish, sprinkle with your choice of aromatic herbs.
  6. Prepare a hot grill or griddle pan. Cook the skewers until the chicken is well browned and fully cooked, turning occasionally for even cooking (about 10-15 minutes depending on the size of the pieces and the intensity of the heat).
  7. Serve the hot chicken skewers.
