Chicken Scaloppine with Mushrooms

Ingredients

  • 4 chicken breasts
  • 300 g of mushrooms (champignons or porcini)
  • Flour as needed
  • 50 g of butter
  • Extra virgin olive oil
  • 1 clove of garlic
  • Chopped parsley
  • 100 ml of white wine
  • Salt and pepper as needed
  • Chicken or vegetable broth (if necessary)

Preparation

  1. Start by cleaning the mushrooms with a damp cloth or a brush and slice them (if you’re using fresh mushrooms).

  2. Cut the chicken breasts into thin slices, about 1 cm thick. These will be your scaloppine.

  3. Lightly flour the chicken slices on both sides.

  4. In a large pan, heat some oil and butter, then add a clove of garlic to flavor the fats.

  5. Once the garlic turns golden, remove it and add the scaloppine, allowing them to brown on both sides over medium-high heat. This will take about 2-3 minutes per side.

  6. After the scaloppine have browned, deglaze with white wine and let the alcohol evaporate.

  7. Add the mushrooms to the pan with the chicken, stir and cook for about 5-10 minutes, until the mushrooms are tender and the chicken is cooked. If necessary, add a little broth to prevent the seasoning from drying out too much.

  8. Season with salt and pepper, then sprinkle with chopped fresh parsley.

Note: If you prefer a creamier sauce, you can add some cooking cream towards the end of cooking.

Serve the scaloppine hot, perhaps accompanied by a side of vegetables or mashed potatoes.
