Chicken Scaloppine

Chicken scaloppine is a simple and tasty dish. Here’s how to prepare it the Italian way.

Ingredients

  • 4 thinly sliced chicken breasts
  • Flour, as needed for dusting
  • 50g of butter
  • Extra virgin olive oil, as needed
  • Salt, as needed
  • Pepper, as needed
  • Lemon juice, as needed (you can also use white wine or chicken broth as a variation)
  • Chopped parsley, for garnish

Preparation

  1. Dust the chicken breasts with flour, taking care to shake off any excess.
  2. In a large pan, melt the butter with a drizzle of olive oil to prevent the butter from burning.
  3. When the butter is hot and foamy, add the floured chicken slices. Brown them on both sides, it will take about 2-3 minutes per side.
  4. Once browned, season with salt and pepper to taste, then add lemon juice (or white wine, or a bit of broth) to create a delicious sauce.
  5. Let it reduce for a few minutes to intensify the flavors and slightly thicken the sauce.
  6. Serve immediately, sprinkling fresh chopped parsley on the dish for a touch of color and freshness.
