Chicken Scaloppine

Ingredients
- 4 thinly sliced chicken breasts
- Flour, as needed for dusting
- 50g of butter
- Extra virgin olive oil, as needed
- Salt, as needed
- Pepper, as needed
- Lemon juice, as needed (you can also use white wine or chicken broth as a variation)
- Chopped parsley, for garnish
Preparation
- Dust the chicken breasts with flour, taking care to shake off any excess.
- In a large pan, melt the butter with a drizzle of olive oil to prevent the butter from burning.
- When the butter is hot and foamy, add the floured chicken slices. Brown them on both sides, it will take about 2-3 minutes per side.
- Once browned, season with salt and pepper to taste, then add lemon juice (or white wine, or a bit of broth) to create a delicious sauce.
- Let it reduce for a few minutes to intensify the flavors and slightly thicken the sauce.
- Serve immediately, sprinkling fresh chopped parsley on the dish for a touch of color and freshness.
