Ingredients
- 2 chicken breasts
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 eggplant
- Arugula or mixed salad to taste
- Extra virgin olive oil
- Salt and pepper as needed
- Herbs of choice (rosemary, thyme, basil)
- Balsamic vinegar or lemon juice
- 1 clove of garlic
- Parmesan shavings (optional)
Preparation
- Start by washing and slicing the vegetables into pieces about half a centimeter thick. Brush them with a little oil, salt, pepper, and chopped herbs.
- Grill the vegetables on a hot grill or a griddle, turning them once they have the classic grill marks. Then set them aside.
