Chicken Salad with Basil Sauce
17/11/2023Here is a recipe for an Italian-style chicken salad with basil sauce that you can easily prepare at home.
Ingredients
- 2 chicken breasts
- 200g of mixed salad (arugula, lettuce, baby spinach, etc.)
- 250g of cherry tomatoes
- 1 cucumber
- 1 red or yellow pepper
- 100g of pitted black olives
- Salt and pepper to taste
- Extra virgin olive oil
- Balsamic vinegar, to taste
For the basil sauce:
- 1 bunch of fresh basil
- 2 cloves of garlic
- 50g of pine nuts
- 50g of grated Parmesan cheese
- 100ml of extra virgin olive oil
- Salt, to taste

Begin by grilling the chicken breasts. Season them with salt and pepper and cook them on a well-heated grill until they are nicely browned and cooked through. Once ready, let them cool down and then slice them into strips.

While the chicken is cooling, wash the salad and dry it well. Cut the cherry tomatoes in half, the cucumber into thin rounds, and the pepper into strips.

For the basil sauce, combine basil, garlic, pine nuts, Parmesan cheese, a pinch of salt, and extra virgin olive oil in a blender. Blend until you obtain a smooth and creamy sauce.

In a large bowl, combine the mixed salad, cherry tomatoes, cucumber, pepper, and olives. Add the grilled chicken strips.

Pour the basil sauce over the salad and gently mix to dress everything. If desired, you can adjust the seasoning with salt, pepper, and a touch of balsamic vinegar.
