Chicken Rolls with Zucchini

Ingredients
- 4 chicken breasts sliced thinly
- 2 zucchinis
- 1 clove of garlic
- 100 g of mozzarella (or other soft cheese of your choice)
- 4 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Basil leaves or other aromatic herb to taste
- Toothpicks to secure the rolls

Start by cleaning the zucchini and slicing them into thin strips lengthwise, using a mandoline or a sharp knife. Grill the zucchini slices on a hot griddle until they are soft and slightly golden. Set them aside.

Lay out the slices of chicken breast and lightly beat them with a meat mallet to make them thinner. Season each slice with salt and pepper.

On each slice of chicken, place a slice of mozzarella and some grilled zucchini strips. Also add fresh basil or another aromatic herb of your choice.

Roll up the chicken breast with the stuffing and secure each roll with one or two toothpicks.

In a large frying pan, heat the extra virgin olive oil with a whole clove of garlic. When the garlic turns golden, remove it and place the rolls in the pan.

Cook the rolls over medium heat, turning them gently to brown on all sides. The cooking should take about 10-15 minutes, depending on the thickness of the rolls.

When they are cooked, remove the rolls from the heat and let them rest for a couple of minutes before serving.
Chicken rolls with zucchini can be served with a side of grilled vegetables or a fresh salad.
