Chicken roll-ups with mushrooms and mustard sauce

Ingredients
- 4 thin chicken breasts
- 200 g of champignon or porcini mushrooms
- 4 slices of cured ham
- 100 ml of cooking cream
- 2 tablespoons of Dijon mustard
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Dry white wine to taste
- Chopped parsley (optional)
- Kitchen twine or toothpicks
Preparation

Start by cleaning the mushrooms with a damp cloth, then slice them thinly. In a pan, heat a drizzle of oil with a clove of garlic and add the mushrooms. Sauté the mushrooms until they are golden and set aside.

Lay out the chicken breasts on a cutting board. If necessary, gently pound them with a meat mallet to make them thinner. Season with salt and pepper to taste.

On each chicken breast, lay a slice of cured ham and distribute the mushrooms on top. Roll up each chicken breast to form the roll-ups. Secure the roll-ups with kitchen twine or toothpicks.

In a non-stick pan, heat a drizzle of oil and brown the roll-ups. Once they are golden on all sides, deglaze with the white wine and let the alcohol evaporate.

Lower the heat and cook the roll-ups for about 15 minutes, turning them occasionally. If necessary, add some water to prevent them from drying out too much.

Remove the roll-ups from the pan and keep them warm. In the same pan, add the cream and mustard. Mix well to blend the flavors and let the sauce thicken. Adjust the salt and pepper.

Pour the mustard sauce over the roll-ups or serve it on the side.

Garnish with chopped parsley before serving for a touch of freshness and color.
