Chicken Rolls with Cheese Slices and Mortadella

The chicken rolls with cheese slices and mortadella are a tasty and fairly simple dish to prepare. Here is the recipe for you.

Ingredients

  • 4 thin chicken breasts
  • 4 cheese slices
  • 4 slices of mortadella
  • Salt
  • Pepper
  • Extra virgin olive oil
  • Flour, as needed
  • White wine, as needed (optional)
  • Rosemary or other herbs of your choice (optional)

Preparation

  1. Take the chicken breasts and lightly pound them to flatten, creating an even surface to work on.
  2. Season each chicken breast with salt and pepper to taste.
  3. On each chicken breast, place a slice of mortadella and a cheese slice. Be careful to leave a small margin at the edges to prevent the filling from leaking during cooking.
  4. Roll up the stuffed chicken breasts into rolls and, if necessary, secure them with toothpicks or kitchen twine.
  5. Coat the rolls in flour, shaking off the excess.
  6. Heat a drizzle of extra virgin olive oil in a pan and brown the rolls on all sides.
  7. Once browned, if you like, you can deglaze with a bit of white wine and let the alcohol evaporate.
  8. Lower the heat, cover with a lid, and cook for about 15-20 minutes, turning the rolls occasionally.
  9. If you wish, during cooking you can add rosemary or other herbs to further flavor.
  10. Check the rolls for doneness with a toothpick or by slightly cutting into one to ensure it’s cooked evenly.

Once cooked, remove the toothpicks or kitchen twine and serve the rolls hot. They can be accompanied by a side of vegetables or a simple salad.

Fun Fact

The mortadella, inserted in the roll, with its rich and slightly spicy taste, melts slightly during cooking, blending with the delicate flavor of the chicken and the creaminess of the cheese for a very pleasant combination. It’s a dish that can be easily personalized by replacing the mortadella with other cold cuts and various types of cheese according to personal taste.
