Chicken Poke

Ingredients
- 200g of chicken breast
- 200g of sushi rice or short-grain rice
- 1 ripe avocado
- 1 large carrot
- 1 cucumber
- 1 green onion
- Sesame seeds to taste
- Soy sauce to taste
- Sesame oil to taste
- 1 lemon (for the juice)
- Salt to taste
- Pepper to taste
Marinade for the chicken:
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of honey or agave syrup
- 1 teaspoon of rice vinegar (optional)
- 1 clove of garlic, minced (optional)
Preparation
- Start with the rice preparation. Rinse the rice until the water is clear, then cook it following the instructions on the package so that it remains al dente. Once cooked, let it cool completely.
- While the rice is cooking, prepare the marinade for the chicken by mixing the soy sauce, sesame oil, honey or agave syrup, rice vinegar, and minced garlic, if using.
- Cut the chicken breast into cubes and let it marinate in the mixture you prepared, letting it rest for at least 20 minutes.
- After marinating the chicken, cook it in a non-stick pan until it is well browned and cooked through.
- Prepare the vegetables: slice the avocado into slices or cubes, grate the carrot, cut the cucumber into thin slices, and finely slice the green onion.
- Assemble the poke bowl by arranging the cooled rice as a base, then place the cooked chicken, avocado, carrot, cucumber, and green onion on top.
- Dress with a drizzle of sesame oil, soy sauce to taste, lemon juice, salt, and pepper.
- Sprinkle with sesame seeds.
Of course, since this is a variation of the classic Hawaiian recipe, which usually includes raw fish, I have presented you with a chicken version that can be considered more of a “Hawaiian-inspired bowl”.
