Chicken Meatloaf

Here is a recipe for an Italian-style chicken meatloaf:

Ingredients

  • 500 g of ground chicken breast
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 egg
  • 50 g of breadcrumbs
  • 50 g of grated Parmesan cheese
  • 2 tablespoons of chopped fresh parsley
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 100 g of cooked ham, diced (optional)
  • 100 g of mozzarella cheese, cut into cubes (optional)

Preparation

  1. Prepare all the ingredients as indicated in the list above.
  2. In a large bowl, combine the ground chicken with the onion, garlic, egg, breadcrumbs, Parmesan, parsley, salt, and pepper. Mix well to blend the ingredients.
  3. If you decide to use the cooked ham and mozzarella, add these two ingredients to the mixture and stir until evenly distributed.
  4. Prepare a baking tray by lining it with parchment paper and brush with a little oil.
  5. Transfer the mixture to the tray and form it into a meatloaf shape, making sure it is compact.
  6. Bake in a preheated oven at 180 °C for approximately 40-50 minutes or until the surface of the meatloaf is golden brown and the chicken is thoroughly cooked inside.
  7. Once ready, let the meatloaf rest for a few minutes before slicing it.

For example, you can enrich it with finely chopped vegetables, such as spinach or carrots, for an extra touch of color and flavor.
