  • 1 egg
  • 50 g of grated Parmesan cheese
  • 2 tablespoons of chopped parsley
  • 2 cloves of garlic, finely chopped
  • 70 g of breadcrumbs or panko
  • Salt and pepper to taste
  • Extra virgin olive oil for frying (or seed oil if you prefer)

Preparation

  1. In a large bowl, combine the ground chicken with the egg, Parmesan, parsley, garlic, breadcrumbs, salt, and pepper.
  2. Knead all the ingredients well until you have a homogeneous mixture.
  3. Take small portions of the mixture and form meatballs of the desired size.
  4. In a pan, heat a generous amount of oil and when it’s hot, fry the meatballs until they are evenly golden brown.
  5. Once ready, drain them on paper towels to remove excess oil.
  6. Serve hot.

You can accompany the chicken meatballs with a side of grilled vegetables or a simple salad, for a balanced meal.
