Chicken in Green Sauce

Here is a recipe to prepare chicken in green sauce, with an Italian twist in the way the green sauce is prepared.

Ingredients

  • 4 chicken thighs (or breasts, according to preference)
  • 2 cloves of garlic
  • ½ glass of white wine
  • Extra virgin olive oil
  • Salt
  • Pepper

For the green sauce:

  • 1 bunch of parsley
  • 1 clove of garlic
  • 4 anchovy fillets in oil
  • 1 teaspoon of capers
  • 1 tablespoon of mustard
  • Juice of ½ lemon
  • Extra virgin olive oil
  • Salt
  • Pepper

Preparation

  1. Start with the preparation of the green sauce. Clean the parsley, wash and dry it. Then, in a food processor, put the parsley, a clove of garlic, anchovy fillets, capers, mustard, and lemon juice. Turn on the processor and slowly incorporate the olive oil until a homogeneous sauce is obtained. Salt and pepper to taste.

  2. Clean the chicken thighs, wash and dry them with paper towels. In a large frying pan, sauté the garlic cloves in extra virgin olive oil. When the garlic begins to golden, remove it and lay the chicken thighs in the pan.

  3. Brown the chicken on all sides over medium-high heat until well golden. At this point, salt and pepper to taste.

  4. Deglaze with the white wine and allow the alcohol to evaporate. Then lower the heat, cover with a lid and cook for about 30 minutes, turning the chicken occasionally.

  5. Once the chicken is cooked and the skin is crispy, remove the lid and let the cooking juices reduce if necessary.

  6. Serve the chicken hot and accompany it with the green sauce, which you can pour over the chicken or serve separately in a gravy boat.
