Chicken Fajitas

I’ll be happy to help you with the Chicken Fajitas recipe. I will provide you with a version with an Italian twist, perhaps with the use of Mediterranean herbs in the marinade. Here are the ingredients and preparation.

Ingredients

  • 4 chicken breasts
  • 2 bell peppers (preferably one red and one yellow)
  • 2 medium onions
  • 2 tablespoons of extra virgin olive oil
  • Juice of 1 lime
  • 2 cloves of garlic, minced
  • 1 teaspoon of sweet paprika
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of ground cumin
  • Salt and pepper to taste
  • Flour or corn tortillas
  • Fresh cilantro (optional, replaceable with parsley if preferred)
  • Guacamole, salsa, grated cheese, or sour cream for serving

Preparation

  1. Chicken marinade: Cut the chicken breasts into strips and put them in a bowl. Add the minced garlic, lime juice, paprika, oregano, cumin, salt, and pepper. Mix well and leave to marinate for at least 30 minutes, better if for a few hours in the refrigerator.

  2. Vegetable preparation: In the meantime, wash the bell peppers, remove seeds and white parts, and cut them into strips. Peel the onions and cut them into strips as well.

  3. Cooking: Heat a tablespoon of extra virgin olive oil in a large frying pan or grill over medium-high heat. Once hot, cook the chicken strips until they are well browned and cooked on the inside. Remove them and set them aside.

  4. Cooking the vegetables: In the same pan, add another tablespoon of oil and sauté the onions for a few minutes. Then add the bell peppers and cook until they are slightly softened but still crisp. Season with salt and pepper.

  5. Assembly: Put the vegetables and chicken in a tortilla, add guacamole, cheese, salsa, or sour cream if you wish. Sprinkle with chopped fresh cilantro (or parsley) and serve warm or at room temperature.

Trivia

Fajitas are a Tex-Mex dish, originating from Texan cuisine with Mexican influences. They were traditionally made with beef, but the adaptation with chicken has become very popular. In Italy, it is common to add a Mediterranean touch with the use of herbs such as rosemary or thyme, and to pair the dish with a fresh rosé wine that can balance the spicy flavor of the Fajitas.
