Chicken Cutlets with Saffron Zucchini

Ingredients
For the cutlets:
- 4 chicken breasts
- Breadcrumbs as needed

- 4 medium zucchinis
- 1 sachet of saffron powder
- 1 clove of garlic
- Extra virgin olive oil as needed

Preparation
Cutlets:
- Cut the chicken breasts so that they are about 1 centimeter thick slices.
- Lightly beat the slices between two sheets of plastic wrap to thin them out further.
- Prepare three dishes with flour, beaten eggs, and breadcrumbs.
- Dust the chicken slices with flour, dip them into the egg, and then coat them with breadcrumbs, making sure the breading sticks well.
- Heat a good amount of oil in a pan and fry the cutlets until they become golden brown and crispy.
- Drain and let them rest on paper towels to remove the excess oil.
Saffron zucchinis:
- Wash the zucchinis and cut them into not too thin rounds.
- In a large pan, sauté garlic with a drizzle of extra virgin olive oil.
