  • 1 sachet of saffron powder
  • 1 clove of garlic
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Chopped parsley (optional)

Preparation

Cutlets:

  1. Cut the chicken breasts so that they are about 1 centimeter thick slices.
  2. Lightly beat the slices between two sheets of plastic wrap to thin them out further.
  3. Prepare three dishes with flour, beaten eggs, and breadcrumbs.
  4. Dust the chicken slices with flour, dip them into the egg, and then coat them with breadcrumbs, making sure the breading sticks well.
  5. Heat a good amount of oil in a pan and fry the cutlets until they become golden brown and crispy.
  6. Drain and let them rest on paper towels to remove the excess oil.

Saffron zucchinis:

  1. Wash the zucchinis and cut them into not too thin rounds.
  2. In a large pan, sauté garlic with a drizzle of extra virgin olive oil.
  3. Add the zucchinis, season with salt and pepper, and cook for about 10 minutes over medium heat, stirring occasionally.
  4. Dissolve the saffron in a tablespoon of hot water and then pour it over the zucchinis. Mix well to evenly distribute the saffron.
  5. Continue cooking for a few more minutes until the zucchinis are tender, and the liquid has reduced a bit.
  6. Add chopped parsley to garnish, if desired.

Serve the hot cutlets accompanied by the saffron zucchinis.
