Chicken Cream
17/11/2023Chicken cream is a comforting and tasty dish, perfect for the cooler days. Here is a basic recipe to which you can add an Italian touch:
Ingredients
- 300 g of chicken breast
- 1 carrot
- 1 stalk of celery
- 1 small onion
- 1 clove of garlic
- 500 ml of chicken broth
- 100 ml of cooking cream
- 30 g of butter
- 30 g of flour
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Preparation
- Start by cleaning and chopping the carrot, celery, and onion into pieces.
- In a large pot, sauté the chopped onion and garlic with a drizzle of extra virgin olive oil until they become translucent.
- Add the carrot and celery, letting them flavor for a few minutes.
- Cut the chicken breast into cubes and add it to the sauté. Brown the chicken until it’s golden brown on all sides.
- Sprinkle the mixture with flour and mix well for a few minutes to toast the flour and remove the raw taste.
- Gradually pour in the chicken broth, stirring constantly to avoid lumps.
- Bring to a boil, then reduce the heat and let simmer for about 20-25 minutes, or until the chicken is tender and the vegetables are cooked.
- Turn off the heat and let cool, then blend the mixture with an immersion blender until smooth.
- Add the cooking cream, butter, adjust with salt and pepper, and mix well.
- Heat the chicken cream over low heat until it is thoroughly warm.
- Serve the chicken cream in bowls, garnished with chopped parsley.
For an additional Italian touch, you could toast some homemade bread and serve it with a drizzle of extra virgin olive oil to complete this delicious cream. Enjoy your meal!
