Chicken Cream

Chicken cream is a comforting and tasty dish, perfect for the cooler days. Here is a basic recipe to which you can add an Italian touch:

Ingredients

  • 300 g of chicken breast
  • 1 carrot
  • 1 stalk of celery
  • 1 small onion
  • 1 clove of garlic
  • 500 ml of chicken broth
  • 100 ml of cooking cream
  • 30 g of butter
  • 30 g of flour
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Preparation

  1. Start by cleaning and chopping the carrot, celery, and onion into pieces.
  2. In a large pot, sauté the chopped onion and garlic with a drizzle of extra virgin olive oil until they become translucent.
  3. Add the carrot and celery, letting them flavor for a few minutes.
  4. Cut the chicken breast into cubes and add it to the sauté. Brown the chicken until it’s golden brown on all sides.
  5. Sprinkle the mixture with flour and mix well for a few minutes to toast the flour and remove the raw taste.
  6. Gradually pour in the chicken broth, stirring constantly to avoid lumps.
  7. Bring to a boil, then reduce the heat and let simmer for about 20-25 minutes, or until the chicken is tender and the vegetables are cooked.
  8. Turn off the heat and let cool, then blend the mixture with an immersion blender until smooth.
  9. Add the cooking cream, butter, adjust with salt and pepper, and mix well.
  10. Heat the chicken cream over low heat until it is thoroughly warm.
  11. Serve the chicken cream in bowls, garnished with chopped parsley.

For an additional Italian touch, you could toast some homemade bread and serve it with a drizzle of extra virgin olive oil to complete this delicious cream. Enjoy your meal!
