Chicken burrito with lime guacamole

Ingredients
- 2 chicken breasts
- 4 large flour tortillas
- 1 red onion
- 1 red bell pepper
- 200 g of cooked black beans
- 100 g of corn
- 100 g of cheddar cheese or other melting cheese
- 2 tablespoons of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro (optional)
For the lime guacamole:
- 2 ripe avocados
- Juice of 1 lime
- 1 clove of garlic, minced
- Salt and pepper to taste

Start by preparing the guacamole. Mash the avocado pulp in a bowl until creamy. Add the lime juice, minced garlic, and season with salt and pepper. Mix well and set aside.

Slice the chicken breasts into strips. Season the chicken with paprika, cumin, salt, and pepper.

Heat a tablespoon of olive oil in a frying pan and cook the chicken until it is golden brown and cooked through.

In the meantime, slice the red onion and red bell pepper. After removing the chicken from the pan, add the rest of the oil and sauté the onion and bell pepper.

Warm up the tortillas according to the package instructions.

Assemble the burrito: on each tortilla, spread some black beans, corn, peppers, and onion, then add the chicken and grated cheese. If you like, sprinkle with chopped fresh cilantro.

Roll up the burrito tightly, folding the side edges inward and then rolling it from the side closest to you toward the opposite side.
