Chicken breast with mushrooms

Ingredients
- 2 chicken breasts
- 300 g of champignon mushrooms or mixed mushrooms
- 2 cloves of garlic
- 1 sprig of rosemary (or 1 teaspoon of dried rosemary)
- 1/2 glass of white wine
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
- Optional: a few tablespoons of fresh cream if you want a creamier sauce
Preparation
- Clean the mushrooms by removing any earthy residues and slice them. If you are using pre-cleaned mushrooms, you can simply cut them into slices.
- Cut the chicken breasts so that they have a uniform thickness. You can also cut them into strips if you prefer.
- In a large frying pan, heat the extra virgin olive oil and add the crushed garlic cloves and rosemary. Let them flavor for a minute.
- Add the chicken breasts to the pan and cook them over medium-high heat until they are golden on both sides. Season with salt and pepper to taste.
- Remove the chicken from the pan and set aside to keep warm.
- In the same pan, add the mushrooms and let them cook until they are tender and golden. During cooking, add salt and pepper.
- Deglaze with the white wine and let the alcohol evaporate over high heat.
- If you want a creamier sauce, now is the time to add the cream.
- Put the chicken back in the pan with the mushrooms and let it season together for a few minutes, until the chicken is well cooked and the flavors have blended.
- Serve hot, garnished with chopped fresh parsley.
