Chicken breast with Marsala and mushrooms

Chicken breast with Marsala and mushrooms is a tasty dish that’s quite simple to prepare. Here’s how to do it.

Ingredients

  • 4 chicken breasts
  • 250 grams of mushrooms (champignon, porcini, or mixed)
  • 1 glass of Marsala wine
  • Flour, as much as needed for dredging the chicken
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Chicken or vegetable broth, if needed
  • 30 grams of butter (optional)

Preparation

  1. Start by cleaning the mushrooms with a damp cloth and slicing them not too thinly.

  2. Lightly flour the chicken breasts on both sides.

  3. Heat the oil in a pan over medium heat and add the chicken breasts. Cook them until they are golden on both sides, then remove them from the pan and set aside.

  4. In the same pan, add a splash of oil if needed and sauté the garlic cloves until golden, then remove them.

  5. Add the mushrooms to the pan and cook until they are golden brown and have released their moisture.

  6. Put the chicken back in the pan with the mushrooms and add the Marsala. Increase the heat to evaporate the alcohol.

  7. Lower the heat, season with salt and pepper, and cover the pan, letting it cook for about 10 minutes. If the sauce reduces too much, add a little broth.

  8. Once the chicken is cooked and the sauce has reached the desired consistency, you can enrich the dish by adding bits of butter to give creaminess.

  9. Sprinkle with chopped parsley before serving, if desired.
