Chicken breast rolls with speck and provola

The chicken breast rolls with speck and provola are a tasty and fairly simple second course to prepare. Here is how to make them:

Ingredients

  • 4 slices of chicken breast
  • 8 slices of speck
  • 100 g of smoked provola cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • White wine to deglaze
  • Rosemary or another aromatic herb of your choice

Preparation

  1. Start by flattening the slices of chicken breast with a meat mallet between two sheets of transparent film. This will help to make them thinner and more uniform, facilitating cooking and rolling.

  2. Salt and pepper the chicken breast slices on both sides.

  3. Cut the smoked provola into sticks.

  4. Lay two slices of speck on each chicken breast slice, overlapping them slightly, and place some sticks of provola in the center.

  5. Roll up the chicken slices with speck and the provola inside, forming rolls. If necessary, use toothpicks to close them and keep their shape during cooking.

  6. Heat a drizzle of extra virgin olive oil in a large frying pan and gently place the rolls in it. Brown the rolls on all sides so they evenly take on color.

  7. Deglaze with some white wine and let the alcohol evaporate.

  8. Add your favorite aromatic herb, such as rosemary or sage.

  9. Cover with a lid and continue cooking for about 15 minutes, turning the rolls occasionally to ensure even cooking.

  10. Make sure the chicken is perfectly cooked before removing from the fire. The chicken is done when the juices that come out are clear and not pink.

  11. Remove the toothpicks before serving.

The rolls can be accompanied by a light side dish such as a mixed salad or grilled vegetables.

Curiosity

The roll is a very versatile preparation that exists in regional variants throughout Italy. In the North, veal or pork meat is often used, while in the South, rolls of eggplant or fish are not uncommon. The pairing of meat and smoked cheese, combined with the savoriness of speck, creates a contrast of flavors that is much appreciated.
