Chicken breast rolls with speck and provola

Ingredients
- 4 slices of chicken breast
- 8 slices of speck
- 100 g of smoked provola cheese
- Salt and pepper to taste
- Extra virgin olive oil
- White wine to deglaze
- Rosemary or another aromatic herb of your choice

Start by flattening the slices of chicken breast with a meat mallet between two sheets of transparent film. This will help to make them thinner and more uniform, facilitating cooking and rolling.

Salt and pepper the chicken breast slices on both sides.

Cut the smoked provola into sticks.

Lay two slices of speck on each chicken breast slice, overlapping them slightly, and place some sticks of provola in the center.

Roll up the chicken slices with speck and the provola inside, forming rolls. If necessary, use toothpicks to close them and keep their shape during cooking.

Heat a drizzle of extra virgin olive oil in a large frying pan and gently place the rolls in it. Brown the rolls on all sides so they evenly take on color.

Deglaze with some white wine and let the alcohol evaporate.
