Chicken Bites with Yogurt and Turmeric

Chicken bites with yogurt and turmeric are a light and tasty dish, perfect for a healthy dinner. Here is the recipe with an Italian touch:

Ingredients

  • 500 g of chicken breast
  • 200 g of natural Greek yogurt
  • 1 tablespoon of turmeric powder
  • 1 clove of garlic, chopped
  • Juice of half a lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs of choice (for example, rosemary or thyme)
  • 1 handful of fresh parsley, chopped (for garnish)

Preparation

  1. Cut the chicken breast into bites approximately 3 cm on each side.
  2. In a large bowl, mix the Greek yogurt with the turmeric, chopped garlic, lemon juice, a drizzle of extra virgin olive oil, salt, pepper, and the aromatic herbs of your choice.
  3. Add the chicken bites to the bowl and mix well so that they are all covered with the yogurt and turmeric marinade.
  4. Marinate the chicken for at least 30 minutes in the refrigerator; if you have time, you can leave it for a couple of hours to intensify the flavors.
  5. Preheat a grill or non-stick pan and, when it is hot, cook the chicken bites until they are golden brown and well cooked inside, turning them occasionally.

To check if it’s done, you can cut one of the larger pieces: there should be no traces of pink inside. Cooking times vary depending on the size of the bites, but they are generally around 8-10 minutes.

Serve the chicken bites hot, garnished with chopped fresh parsley, and if you wish, accompany with a fresh seasonal salad or grilled vegetables.
