Chicken Morsels with Radicchio and Pine Nuts

Ingredients
- 500g of chicken breast
- 1 head of radicchio
- 50g of pine nuts
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- White wine for deglazing
- Fresh aromatic herbs (rosemary or thyme)
- Butter or oil for cooking
Preparation
- Start by cutting the chicken breast into evenly sized morsels to ensure an even cooking.
- Thoroughly wash the radicchio and cut it into not too thin strips.
- In a large pan, toast the pine nuts over medium heat until golden brown. Then, remove them and set aside.
- In the same pan, add some extra virgin olive oil or, if you prefer, a piece of butter. Sauté finely chopped garlic in it.
- Add the chicken morsels and brown them evenly. Season with salt and pepper to taste.
- When the chicken is colored, deglaze with a splash of white wine and let the alcohol evaporate on high heat.
- Add the radicchio to the pan and let it wilt slightly, until it has softened a bit.
- At the end of cooking, remove the garlic if preferred and add the toasted pine nuts, mixing gently to blend the flavors.
- Serve immediately, garnishing with chopped fresh aromatic herbs.
