Chicken bites, bell peppers, and sun-dried tomatoes
17/11/2023Chicken bites with bell peppers and sun-dried tomatoes are a tasty and colorful dish that combines the tenderness of the chicken with the sweetness of the bell peppers and the intensity of the sun-dried tomatoes. Here is the recipe with an Italian twist.
Ingredients
- 500 g of chicken breast
- 2 bell peppers (red and yellow for a more colorful dish)
- 100 g of sun-dried tomatoes in oil
- 1 medium onion
- 2 cloves of garlic
- Extra virgin olive oil to taste
- Salt to taste
- Pepper to taste
- A handful of fresh basil
- White wine (optional, to deglaze)
Preparation
- Start by cutting the chicken breast into bites and the bell peppers into strips after cleaning them and removing the seeds.
- Do the same for the sun-dried tomatoes, which you must cut into not too thin strips.
- Thinly slice the onion and mince the garlic.
- Heat a drizzle of extra virgin olive oil in a large pan and sauté the onion and garlic until they become translucent.
- Add the chicken bites to the pan and brown on all sides. If desired, you can deglaze with a bit of white wine and let the alcohol evaporate.
- Add the bell peppers and cook for a few minutes on medium heat until they start to soften.
- Insert the sun-dried tomatoes and continue cooking for another 5-10 minutes, stirring occasionally, until the chicken is fully cooked and the peppers are tender but still crunchy. Adjust with salt and pepper.
- Before serving, sprinkle the dish with chopped fresh basil.
The mix between chicken, bell peppers, and sun-dried tomatoes creates a blend of Mediterranean flavors that perfectly match the freshness of the basil. If you wish, you can accompany this dish with Basmati rice or a side of crispy bread.
