Parmesan Crusted Chicken Bites

Ingredients

  • 500 g of chicken breast
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • 100 g of flour
  • Bread crumbs as needed
  • Salt as needed
  • Pepper as needed
  • Extra virgin olive oil or frying oil

Preparation

  1. Start by cutting the chicken breast into cubes or strips, depending on your preferences.

  2. In a bowl, beat the eggs with a pinch of salt and pepper.

  3. On separate plates, arrange the flour, the grated Parmesan mixed with some breadcrumbs, and the beaten eggs.

  4. Dip the chicken bites first in the flour, then in the beaten egg, and finally in the Parmesan and breadcrumb mixture. Make sure they are evenly coated.

  5. In a pan, heat the oil and, when it is hot, fry the chicken bites until they are golden and crispy. If you prefer a lighter cooking method, you can bake the bites in the oven at 180 °C for about 15-20 minutes or until golden.

  6. Once golden, transfer the bites onto paper towels to remove the excess oil.

  7. Serve the bites hot, possibly accompanied by a sauce of your choice, such as mayonnaise, cocktail sauce, or a yogurt sauce for a fresh contrast.
