Chicken Morsels with Grapes

Chicken Morsels with Grapes is a tasty and original dish that combines the delicacy of chicken with the sweetness of grapes. Let’s see how to prepare it:

Ingredients

  • 500g of chicken breast
  • 200g of white grapes (seedless, if possible)
  • Flour as needed for dredging the chicken
  • 1/2 glass of white wine
  • 1 small onion, chopped
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chicken or vegetable broth as needed (optional)
  • Chopped parsley for garnish (optional)
  • A knob of butter (optional)

Preparation

  1. Cut the chicken breast into medium-sized morsels, then lightly dredge them in flour.
  2. In a skillet, heat the extra virgin olive oil and add the chopped onion. Sauté until it becomes translucent.
  3. Add the floured chicken morsels and brown them until they are golden on all sides.
  4. Deglaze the chicken with the white wine and let the alcohol evaporate.
  5. Add the grapes cut in half and seeds removed, if necessary. Gently stir to avoid breaking the grapes.
  6. Season with salt and pepper to your liking. If necessary, you can add some broth to prevent the sauce from drying out too much.
  7. Cook over medium-low heat with the lid on until the chicken is cooked through and the grapes are softened, for about 10-15 minutes.
  8. If you prefer a slightly creamier sauce, you can add a knob of butter towards the end of cooking.
  9. Garnish with chopped parsley before serving.

Fun Fact

This dish has a sweet and savory flavor contrast that is much appreciated. If you want an even more “Italian” variation, you might consider using raisins soaked in warm water and then squeezed, to add a touch of sweet and sour flavor and a different texture. Pair it with a light and fruity white wine to enhance the flavors.
