Chicken and Watermelon Salad

Ingredients

  • 300 g of chicken breast
  • 250 g of watermelon (seedless and cut into cubes)
  • 100 g of arugula or mixed salad
  • 50 g of feta or goat cheese, crumbled
  • 30 g of pitted black olives
  • A few fresh mint leaves
  • Salt and pepper q.b.
  • Juice of 1 lime or lemon
  • Extra virgin olive oil

Preparation

  1. Start by grilling the chicken breast. If you wish, you can marinate the chicken with some oil, lemon, salt, and pepper before cooking it. Cook the chicken on a hot grill for about 5-6 minutes per side or until it is well cooked inside. Then let the chicken rest for a few minutes and cut it into strips or cubes.

  2. While the chicken is cooling, in a large bowl, combine the watermelon, arugula or mixed salad leaves, hand-torn mint leaves, and black olives.

  3. Add the grilled and cooled chicken to the salad.

  4. In another small bowl, prepare the vinaigrette by mixing lime or lemon juice, salt, pepper, and extra virgin olive oil. Emulsify well and then pour it over the salad.

  5. To finish, add the feta or goat cheese, crumbled over the salad.

  6. Gently toss the salad to ensure all the ingredients are mixed with the vinaigrette.
