Chicken and Scamorza Strudel

Ingredients
- 1 roll of puff pastry or strudel dough
- 300 g of chicken breast
- 200 g of smoked scamorza cheese
- 1 small onion
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 egg for brushing
- Aromatic herbs to taste (thyme, rosemary, oregano)
- 1 tablespoon of milk

Begin by cutting the chicken breast into small cubes. Finely chop the onion and sauté in a pan with a drizzle of extra virgin olive oil until it becomes translucent.

Add the chicken to the onion and cook for about 5-7 minutes, until the chicken is well cooked and has taken on a bit of color. During cooking, add salt, pepper and your preferred aromatic herbs.

Once the chicken is ready, allow the mixture to cool. In the meantime, cut the smoked scamorza into cubes.

Roll out the puff pastry on a lightly floured surface and place the cooled chicken leaving a free border of about 2 cm. Evenly distribute the smoked scamorza over the chicken mixture.

Roll up the puff pastry onto itself starting from the long side, as if you were preparing a roll. Seal the edges and the ends well.

Beat the egg with a tablespoon of milk and brush the entire surface of the strudel to achieve a golden and crispy crust after cooking.

Preheat the oven to 180 °C. Arrange the strudel on a baking tray lined with parchment paper and bake for about 25-30 minutes or until the puff pastry is golden and crispy.
