Ingredients
- 4 chicken thighs (or drumsticks)
- 4 medium potatoes
- 2 tablespoons of extra virgin olive oil
- 2 cloves of garlic
- 1 sprig of rosemary (or 1 teaspoon of dried rosemary)
- 1/2 glass of white wine
- Salt to taste
- Black pepper to taste
Preparation
- Start by washing and drying the chicken thighs, then season them evenly with salt and pepper.
- Peel the potatoes and cut them into pieces about 2-3 cm, then rinse them to remove the excess starch and dry them.
- Take a large skillet, heat the oil and sauté the garlic cloves to flavor it.
- Add the chicken to the skillet and brown it over medium-high heat, turning it occasionally to ensure it colors evenly.
- Once the chicken is golden, temporarily remove it from the skillet and set it aside.
- In the same skillet, add the potatoes and brown them in the aromatic oil, turning them from time to time.
- Reduce the heat and add the chicken back into the skillet with the potatoes. Add the rosemary.
- Deglaze with white wine, letting the alcohol evaporate over high heat.
- Lower the heat, cover with a lid and let cook for 30-40 minutes, until the chicken is well cooked and the potatoes are tender. If necessary, add a little water during cooking.
- Adjust salt and pepper to taste and serve hot.
