Chicken and Potato Bundles

The chicken and potato bundles are a tasty dish that can be served either as an appetizer or as a main course. The recipe I’m about to share with you has a clear Italian inspiration, due to the use of ingredients such as prosciutto crudo to wrap the chicken, and parmesan to flavor the potatoes.

Ingredients

  • 4 chicken breasts
  • 8 slices of prosciutto crudo
  • 4 medium-sized potatoes
  • 1 sprig of rosemary
  • 100 g of grated parmesan cheese
  • Salt
  • Pepper
  • Extra virgin olive oil

Preparation

  1. Start by preheating the oven to 200 °C (about 390 °F).
  2. Peel the potatoes and cook them in boiling salted water until they become soft enough, but without falling apart.
  3. Once cooked, roughly mash them with a fork or a potato masher. Add the grated parmesan, salt, pepper, and a drizzle of oil, mixing everything until you get a homogeneous mixture.
  4. Take the chicken breasts and, if necessary, flatten them slightly with a meat mallet, then season with salt and pepper.
  5. Arrange two slices of prosciutto crudo on top of each chicken breast to completely cover them.
  6. Place a portion of the potato and parmesan puree in the center of each chicken breast.
  7. Fold the chicken breasts over themselves, forming bundles, and tie each one with kitchen twine to maintain their shape during cooking.
  8. Place the bundles in an oiled baking dish and add the rosemary.
  9. Bake for about 20-25 minutes, or until the chicken is golden brown and fully cooked.
  10. Let the bundles rest for a few minutes before removing the twine and serving them.

Curiosity

The bundle is a refined way to present and enjoy chicken. Enclosing the filling inside the meat, as in the bundles, helps to keep the juices inside, ensuring a succulent dish at the end of cooking. Additionally, the combination of chicken and potatoes is a classic in the cuisine of many cultures, but the addition of prosciutto crudo and parmesan gives the dish a delicious Italian twist.
