Chicken and Potato Pie

Ingredients

  • 500 g of potatoes
  • 400 g of chicken breast
  • 200 ml of fresh cream for cooking
  • 100 g of grated Parmesan cheese
  • 2 cloves of garlic
  • 1 sprig of fresh rosemary
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by boiling the potatoes in salted boiling water until they are soft enough to be mashed. Once cooked, peel them (if you prefer) and roughly mash them with a fork or potato masher, creating a rustic mixture.

  2. In the meantime, cut the chicken breast into cubes of about 1-2 cm and season them with salt and pepper. Heat a drizzle of extra virgin olive oil in a pan and brown the chicken cubes until they are cooked and slightly crispy on the outside. Add the whole garlic cloves and rosemary to flavor, being careful not to burn them.

  3. Combine the chicken with the mashed potatoes, adding the fresh cream and grated Parmesan cheese. Mix well to blend the ingredients.

  4. Arrange the mixture in a baking dish previously greased with a drizzle of oil and sprinkle with more Parmesan.

  5. Bake in a preheated oven at 200 °C for about 20 minutes or until the surface of the pie becomes golden and crispy.

  6. Let it rest for a few minutes before serving.
