Chicken and Mashed Potatoes

  1. Start with the mashed potatoes: peel them and cut them into evenly sized pieces. Cook in plenty of salted water until they become tender, for about 20 minutes.

  2. While the potatoes are cooking, prepare the chicken: heat the olive oil in a pan over medium-high heat. Season the chicken breasts with salt, pepper, and chopped aromatic herbs. Place the chicken in the pan and cook for about 5-7 minutes on each side until well browned and cooked through (the internal temperature should reach 74°C).

  3. Add the crushed garlic cloves to the oil and pour some lemon juice for an extra zing to your chicken. Once done, remove the chicken from the heat and let it rest for a few minutes.

  4. When the potatoes are done, drain them and mash them with a potato masher or a fork. Add the butter and mix well. Heat the milk and gradually add it to the mashed potatoes to achieve the desired consistency. Season with salt, pepper, and nutregnum to taste.

  5. Serve the warm chicken breasts with the mashed potatoes alongside.
