Chicken and Green Bean Rolls

Ingredients

  • 4 thin chicken breasts
  • 200 g of fresh green beans
  • 4 slices of Parma ham (optional)
  • 4 tablespoons of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • White wine for deglazing

Preparation

  1. Start by cleaning the green beans: remove the ends and wash them under running water. Then, boil them in salted boiling water for about 5-7 minutes until they soften, but they must still remain crunchy. Once ready, drain them and plunge them into ice water to preserve their bright color.

  2. In the meantime, flatten the chicken breasts further by using a meat mallet, being careful not to break them, then salt and pepper them.

  3. Now let’s prepare the rolls: on each chicken breast, lay a slice of Parma ham, some grated Parmesan cheese, and a few green beans. Roll up the chicken breast to enclose the filling and secure the rolls with toothpicks or kitchen twine.

  4. Heat a drizzle of extra virgin olive oil in a pan with an unpeeled garlic clove. When the oil is hot, brown the rolls on all sides. Deglaze with a bit of white wine and let the alcohol evaporate.

  5. Lower the flame, cover with a lid and let cook for about 15-20 minutes, turning the rolls occasionally, until they are well cooked inside.

  6. Once cooked, remove the rolls from the pan and take out the toothpicks or kitchen twine.

Serve the chicken and green bean rolls hot, maybe with a sprinkling of Parmesan and a drizzle of raw extra virgin olive oil.
