Chicken and Chicory Rolls

Chicken rolls with chicory are a tasty dish that combines the delicacy of chicken with the slight bitterness of chicory. Here is the recipe with an Italian twist:

Ingredients

  • Thinly sliced chicken breast: 4
  • Chicory: 200 g
  • Garlic: 1 clove
  • Extra virgin olive oil: as needed
  • White wine: 100 ml
  • Salt: as needed
  • Pepper: as needed
  • Sliced cooked or raw ham: 4
  • Sliced scamorza or other soft cheese: 4

Preparation

  1. Start by cleaning the chicory and cook it in a pan with a drizzle of oil and a garlic clove until it softens. Season it with a little salt and put it aside.
  2. Lay out the chicken slices and slightly flatten them with a meat mallet. Season with salt and pepper on both sides.
  3. On each slice of chicken, place a slice of ham and a slice of cheese, then add some of the cooked chicory.
  4. Roll up the stuffed chicken slices on themselves to form rolls and secure them with a toothpick to keep them closed.
  5. In a non-stick pan, heat a drizzle of oil and sauté the rolls on all sides until they are golden brown.
  6. Deglaze with white wine and let the alcohol evaporate.
  7. Lower the heat, cover with a lid, and cook for about 15-20 minutes, turning the rolls occasionally.
  8. Season with salt and pepper if necessary, and serve the rolls hot.
